Make preserved lemons

I’ve always loved lemons.

I remember standing in mom’s kitchen and cutting up lemons, adding salt and then eating them as is. I love the smell of lemons, I love the sourness of them, I love the color – I just really, really enjoy lemons. I even got a bag of lemons for my birthday one time.

Recently the organic supermarket Paradiset in Stockholm shut down, and they had a big sale. Obviously I bought a bunch of organic lemons to preserve them. That’s the beauty of preserving and pickling – you can eat it weeks later.

I used this recipe from Zeina’s kitchen (in Swedish).

I eat them with olives, in salads, vegan stews or honestly just as they are, because they are that good. Hope you like it.
